Ingredients:
For the Roasted Baby Broccoli:
- 8 oz Baby Broccoli
- 2 tbsp olive oil
- Salt and pepper, to taste
For the Lemon Tahini Dressing:
- 2 tbsp tahini
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp water (or more, if needed)
- 1 tbsp olive oil
- 1 tbsp water (or more, if needed)
- 1 clove garlic, minced
- Salt and pepper, to taste
- 1/2 tsp honey or maple syrup (optional, for sweetness)
Instructions:
Roast the Baby Broccoli:
- Preheat oven to 425°F (220°C).
- Spread Baby Broccoli on a baking sheet and drizzle with olive oil.
- Season with salt and pepper. Toss to coat evenly.
- Roast for 12–15 minutes, until tender and slightly charred.
Prepare the Lemon Tahini Dressing:
- In a small bowl, whisk together tahini, lemon juice, olive oil, water, garlic, salt, pepper, and honey or maple syrup if using.
- Adjust consistency by adding more water if needed.
Serve:
- Drizzle the roasted Baby Broccoli with the Lemon Tahini Dressing.
- Serve warm or at room temperature as a side dish or appetizer.
