Ingredients:

For the Roasted Baby Broccoli:

  • 8 oz  Baby Broccoli
  • 2 tbsp olive oil
  • Salt and pepper, to taste

For the Lemon Tahini Dressing:

  • 2 tbsp tahini
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp water (or more, if needed)
  • 1 tbsp olive oil
  • 1 tbsp water (or more, if needed)
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 1/2 tsp honey or maple syrup (optional, for sweetness)

Instructions:

Roast the Baby Broccoli:

  1. Preheat oven to 425°F (220°C).
  2. Spread Baby Broccoli on a baking sheet and drizzle with olive oil.
  3. Season with salt and pepper. Toss to coat evenly.
  4. Roast for 12–15 minutes, until tender and slightly charred.

Prepare the Lemon Tahini Dressing:

  1. In a small bowl, whisk together tahini, lemon juice, olive oil, water, garlic, salt, pepper, and honey or maple syrup if using.
  2. Adjust consistency by adding more water if needed.

Serve:

  1. Drizzle the roasted Baby Broccoli with the Lemon Tahini Dressing.
  2. Serve warm or at room temperature as a side dish or appetizer.
